Raised on Everything
Daranee Muongpruan grew up in a Thai household that fed her tofu, oatmeal, and dishes from cultures far beyond their own. That early, restless curiosity about flavor has shaped every decision she's made at MU.
The 4am Ritual
Before most of Redlands has stirred, Daranee is already at the Los Angeles fish market at 4am — buying the same fresh-caught mussels, halibut, and scallops as the city's sushi chefs. When delivered fish fell short of her standard, she simply went where serious cooks go.
Ten Things, Done Right
Daranee and Chef Michael collaborate daily on what the market has yielded — deciding which fish to buy and how spare a dish can be. The goal has never been abundance; it has always been to make fewer things as close to perfect as possible.
